Betty's After Easter Cheddar Ham Casserole Recipe

In this video, Betty gives you a way to use up some of your leftover baked ham from Easter--her After Easter Cheddar Ham Casserole recipe! It's a combination of great ingredients, and it will never taste like leftovers. Plus, you can make it from canned tender-chunk ham, if you don't have leftover ham! Ingredients: 6 oz. uncooked pasta (I used medium -sized shells.) 1/2 pot boiling water 1 tablespoon salt 2 tablespoons butter or margarine 1/4 cup flour 1 1/2 cups milk 1 1/2 cups shredded Cheddar cheese dash of salt (for the cheese sauce) (2) 5 oz. can tender-chunk ham (I used Hormel.) 1/2 cup chopped green pepper 1/2 cup milk--added after all other ingredients cooking oil spray Place 6 oz. uncooked pasta into rapidly boiling water in a medium to large pot. Add 1 tablespoon salt. Stir and then let cook for about 8 minutes, until al dente (cooked, but still chewy, not mushy). While cooking your pasta, prepare your cheese sauce. Melt 2 tablespoons butter or margarine in a saucepan. Remove from heat and add 1/4 cup flour. Stir the flour and butter or margarine until blended. Now, add 1 1/2 cups milk and 1 1/2 cups shredded Cheddar cheese. Return this mixture to the stove, add a dash of salt, and cook, stirring constantly, until mixture is thickened and smooth. Your pasta should be done now, and when it is done, drain the water through a colander and return the cooked pasta to its original pan. Combine the cooked cheese sauce with the cooked pasta. 4 Delicious Ham Casserole Recipes

When people think of ham, they usually think of a holiday meal. In our household, we enjoy eating ham several times a year.

After our meal is over, I like to freeze my cooked ham so that I can use it in future recipes. Before you freeze it, cube or chop it up into bite-sized pieces. I like to freeze mine in 2 cup containers.

Here are 4 delicious casserole recipes that you can make using your left-over ham.

Ham and Lima Bean

1 1/2 cups cooked ham, cubed
1 small onion, chopped
1 small pkg. egg noodles, cooked
1 pkg. lima beans, cooked
1 can cream of chicken soup
1 1/2 cups milk
1 cup sharp cheddar cheese

Brown ham and onion in 2 tablespoons margarine. Mix all ingredients together (except for the cheese) and pour into greased casserole dish. Top with sharp cheddar cheese. Bake in a 350 degree oven for 30 minutes.

Ham and Broccoli

1 pkg. au gratin potatoes
1 (10 oz.) pkg. frozen chopped broccoli
2 cups cooked ham, cubed

Using a 2-quart casserole dish, prepare potatoes as directed on the package, except omit butter. Stir in broccoli and ham. Bake in a 350 degree oven for 45 minutes.

Ham and Rice

1 cup instant white rice
1 cup orange juice
1 can cheddar cheese soup
1/2 cup milk
2 cups cooked ham, cubed

Put uncooked rice in a 2-quart casserole dish. Add orange juice and then layer the ham on top of the rice. Mix soup and milk in a bowl, pour soup mixture over ham. Bake in a 350 degree oven for 30 minutes.

Ham and Cheese

1 lb. bacon
1 1/2 cups cooked ham, diced
2 cups swiss cheese, shredded
1 cup cheddar cheese, shredded
1 onion, chopped
4 eggs, lightly beaten
1 cup baking mix (bisquick)
salt and pepper to taste

Place bacon in a skillet over medium-high heat, cook until crisp. Drain, crumble and set aside. Mix the bacon, ham, swiss cheese, cheddar cheese, and onion in a 9 x 13" baking dish. In a bowl, mix the eggs, baking mix, salt and pepper. Pour over the ingredients in the baking dish. Bake in a 350 degree oven for 45 minutes, until top is golden brown.
