Makes 6 servings You will need: 2 pounds red skin potatoes (gold works too) 3/4 cups veggies (optional) 1 medium onion 3 cups chicken broth 1/2 teaspoon salt 1 cup half and half 1/4 teaspoon black pepper 2 cups shredded cheddar cheese (8 ounces) Place your peeled chopped potatoes, veggies, onion, broth and salt into the crockpot. Cover and cook on LOW for 6-7 hours and HIGH for 3-4 hours, until veggies and potatoes are tender. After the desired time turn your crockpot to HIGH, if it wasnt already. Now add the half and half. Cover and cook for 20 minutes. Turn off your crockpot. Remove the lid and pot if you can. Let stand for 5 minutes. Now add in your cheddar cheese and stir until melted. ENJOY!
