Happy Hispanic Heritage Month (Sept.15 - Oct. 15)! This week's recipe is inspired by a restaurant I used to frequent when I was living in Atlanta called Havana (www.havanarestaurantatlanta.com). I would usually get a Cuban sandwich combo, which came with a side of yellow rice, black bean soup, and tomatoes. This recipe is a play on those flavors - and keep in mind that it can be a meatless meal, too! (TIP Try also with bacon instead of the ham). Ingredients: Extra virgin olive oil 1/2 white onion, chopped 3 cloves garlic, chopped 3 15oz cans of black beans in seasoned sauce 1 15oz can of diced tomatoes garlic salt to taste pepper to taste ground cumin to taste 1 - 1 1/2 chopped cilantro (optional) 1 16oz package of yellow rice
