I had help, barely, from Eric. and I get to freeze the leftovers. the pea soup recipe ... as built 2008 02 10 ... take a pound of split peas, rinsed, boiled for two hours in a half pot of water. Didn't measure the water. Should have. I diced a pound of carrots, three medium-large onions and a bunch of celery. These went into another pot with a half can of chicken broth over high heat to "sweat" them. I diced a pound slab of ham into half inch or larger cubes and browned them in the large fry pan. This and a tablespoon of minced garlic went into the vegetables, as did the peas and pea water. Simmered this for about another hour or two. For the croûtons, I sliced a sourdough baguette into thin slices, then cut those slices in half. I tossed these large bread chunks with olive oil and mince garlic, then baked them at 350 for about 15 or 20 minutes. After baking, I tossed them with some grated Parmesan cheese. This made two bowls for now and three or four quart freezer zip lock bags for later.
