Spanish Tapas Recipe

Tapas are snacks, small delicious bites of food served at Tapas Bars and restaurants all over Spain. Inexpensive and with marvelous variety, Tapas are a good way to sample Spanish dishes without over filling your stomach or over emptying your pockets.

Origin

It is said that Tapas were created for the first time when the ailing King of Spain, Alfonso the 10th, was advised by his physicians that a cure would be found if instead of drinking wine by itself, between meals, he consumed a morsel of food with it. When the King had recovered from his illness, he wished to save the general populace from suffering in the same way and declared that from that time onwards, no alcohol could be served in the inns and taverns of Castile unless food was served with it.

Apart from the legend, there were purely practical reasons for the tradition of Tapas too. Farmers and labourers in rural Spain found Tapas a welcome addition to their work day, in that it gave them the energy to enable them to continue working throughout the day.

Tapas and Drink

Historically, wine was served with Tapas in winter to keep the body heated and ward off illness. In taverns, wine was served with a piece of bread with a topping of cheese or ham balanced on the mouth of the glass, to cover the wine and also to lessen the effects of the alcohol by absorbing it in the stomach. Wine is still the favoured accompaniment today but depending on the region and the season, sherry or cider might also be served with Tapas.

In summer, the drink often taken with Tapas in the hot regions of Southern Spain is gazpacho, a cold soup made primarily of tomatoes that is cooling and refreshing.

Tapas Recipes

Like the alcohol served with the Tapas, the Tapas itself can vary greatly from region to region and recipes have developed and changed throughout history. In medieval times, widespread poverty meant that the main ingredient of Tapas was bread, a cheap and readily available staple. Olives were also favoured whole or in a paste on bread, being plentiful all over Spain.

In wealthier times and today, meat (ham or sausage, smoked or fresh), fish and seafood (fried whitebait or calamari), dairy products (Spanish cheeses) and eggs (tortilla) are common constituents of Tapas. Vegetables are also important. Green beans in a garlicky tomato sauce are popular as are fried aubergine and potatoes.

Tapas have endured throughout the ages thanks to their combination of convenience, practicality and of course, their delicious taste.

Italian wedding soup with meatballs and Parmesan

I just attended a wedding in Italy and was a feast for the eyes and appetite. The tables were lavishly decorated with candied almonds everywhere. The dinner was a production and lasted for hours. During dinner, guests pay to dance with the bride, a beautiful blonde smile.

This custom dates back centuries. Apparently, donations help defray the expenses of marriage. Dance with the bride was also fun.

According to "Weddings Italy - Customs andTraditions, Past and Present ", an article on the website of Hudson Valley Weddings, many modern marriages are the continuation of effective action. And the checks are deposited in a satin bag for the bride. Food is the main objective of a psychological relationship between the family and guests. The many courses symbolize good luck.

I do not remember all the courses served at the wedding I attended, but I think it was the first starter, followed by soup, pasta, main course, and wedding cake.

AnitaLogan looks at marriage customs in his article, "The traditional Italian wedding", published on the website of Life in Italy. She says that the course may include ham and stuffed squid appetizer. This course may also include a variety of cheeses, olives and peppers. Subsequent courses include pasta, soups, salads, meat and fruit. "Nobody goes home hungry," he says, and "most people feel as if they could explode."

Wedding soup is a common path. You can buy canned soup in the store, but I think that tastes homemade and did not do. The ingredients are simple: meatballs, chicken broth, spinach, carrots, diced pasta and Parmesan cheese. Can I make small meatballs the size of a coin, that cooking fast and fun to eat. You can make smaller if you wish.

Kids will enjoy rolling balls and eat the soup if he helped make. It is not necessary to attend a wedding in Italy to enjoy this classic> Recipe. Serve the soup with crusty bread and a glass of wine and you feel as if I were at a party. This soup tastes better the next day.

Ingredients

90% ground beef 1 pound
1 large egg
Egg substitute 1 / 4 cup
1 / 4 cup Italian bread crumbs
3 tablespoons grated Parmesan cheese
1 teaspoon dried basil
1 tablespoon onion powder
2 1 / 2 quarters of low sodium chicken broth
2 cups fresh spinach, thinly sliced
3 / 4 cup dicedcarrots
1 cup tubes (small tubes) Pasta

Method

Combine ground beef, eggs, egg substitute, bread crumbs, Parmesan cheese, basil and onion powder in a bowl. Form small meatballs. Pour chicken broth into the pot of soup. Add the meatballs, carrots and spinach tubes. Bring to a boil, reduce heat and simmer for 10-15 minutes or until meatballs are done and the pasta is al dente. Cut a meatball and make sure that the inside is no longer pink and cookedthrough. Ladle into cups and sprinkle with parmesan. Makes 8-10 servings.

In this video, Betty and her husband, Rick, a late lunch in the Hall on the river at Boonesborough, Kentucky. Boonesborough is about 20 miles from our house. We stopped at Boonesborough State Park on the way to the restaurant to mark the original location of Fort Boonesborough (Daniel Boone's name). In the restaurant we chose fried banana peppers, cheese, beer Snappy, fried catfish, cole slaw, garlic, cheese Grits, along with a cold soda and a glass of iced tea. I alsoordered an authentic piece of Derby Pie (made by Kitchens Kern) to take home. We have already fried banana peppers, garlic, beans, cheese, catfish, and bettyskitchen derby pie, so we visited the restaurant especially to see the cheese beer. I load of cheese and beer soon! Betty's Skillet Mexican Cornbread Recipe

In this video, Betty demonstrates how to make Mexican cornbread, baked in an iron skillet. Full of cornmeal, eggs, Cheddar cheese, sour cream, whole kernel corn, and chopped green chiles, you can't miss with this one! Ingredients: 2 cups self-rising cornmeal mix (Adjust with cornmeal and flour, and add baking powder and salt, if you cannot find self-rising cornmeal mix.) 1 cup finely shredded Cheddar cheese (You may substitute a different type of cheese, if you like.) 1 cup sour cream 1 cup whole kernel corn, drained 4 oz. can chopped green chiles, drained 2 eggs, well beaten 2 tablespoons vegetable oil (for batter) 2 tablespoon peanut oil (for greasing skillet or baking pan) Heat oven to 400 degrees. Grease a 9-inch square baking pan or a 10-inch oven-proof skillet. (I used an iron skillet and poured 2 tablespoons peanut oil into the bottom and used my hands to spread it over the bottom and around the sides of the skillet. Then, I heated the skillet to a very high heat right before pouring the cornmeal batter in. Do not let the hot oil smoke!) In a large bowl, combine 2 cups self-rising cornmeal mix, 1 cup shredded Cheddar Cheese, 1 cup sour cream, 1 cup whole kernel corn, 4 oz. can drained green chiles, 2 well-beaten eggs, and 2 tablespoons vegetable oil. Stir, just until all ingredients are combined. Pour into a hot, greased skillet or baking pan. Bake for 20 minutes, or until golden brown and done. How to accomplish the worlds greatest soup

I adapted this DELICIOUS recipe from one I found in the Island Packet. The original recipe only included the bacon and the green onions, and called for significantly less cheese. I've also made it without the ham and it was pretty good.....you can change it up to fit your taste preferences! Things you will need: 4 Tablespoons unsalted butter 1 finely chopped onion 1 tablespoon minced garlic 1/4 cup flour 4 1/2 cups chicken stock 1 1/2 cups half-and-half 4-6 baked potatoes, diced 16 oz diced ham Cayenne pepper to taste 1/4 cup dry white wine (optional) 16 oz grated sharp white cheddar cheese 6 - 12 cooked bacon slices broke into 1-inch pieces 6 green onions

Easter's on it's Way! Brown Sugar Ham

Greetings, or should I say Happy Easter! The piece' de' resistance, the centerpiece, the one thing everyone anticipates at Easter, as much as the Turkey at Thanksgiving..........The Ham! Now, in my opinion, you can't have Easter without a big beautiful succulent ham, covered in sweet pineapple, studded with spicy cloves and beautified with candied cherries. Pineapples and cherries are like jewelry for my ham. Cover the lot with a generous portion of brown sugar, put it in the oven, all covered up and cozy for a warm sauna nap and what do you get? Pure Easter Heaven! So simple, so delicious and so budget friendly! Remember, ham is always on sale this time of year so it's good to get an extra to throw in the freezer for when you want the classic taste of Easter in the middle of the summer or for back to school. You'll get lots of meat for dinner and leftovers of sandwiches and casseroles but the best, best part is the ham bone that you will get to freeze and use to season beans or bean soup or collar greens or pea soup, well you get the picture. Low Cholesterol | Make Low Cholesterol Diet

Are you looking for a free list of low cholesterol foods? People who have high cholesterol levels don't even know that they have it because there aren't any specific symptoms. Often, they already have a heart disease caused by hypercholesterolemia before they even become aware of it. This is why experts recommend eating a diet low in cholesterol in order to avoid this scenario. Prevention is the best cure and many are now interested in looking up a free list of low cholesterol foods.
Diet for Low Cholestrol:
Cereals
Choose oat cereals if possible as they are extremely heart healthy. But make sure you check the labels on all cereals for calories, sodium and sugar.
Cereals To Avoid
Avoid instant hot cereals, granola and coconut containing cereals.
Soups
Choose fat-free, low-salt broth, bouillon and consomme, homemade soup skimmed of fat and cream soup made with non-fat milk.
Soups To Avoid
Avoid soups made with whole milk or cream, canned soups, and broth containing fat.
Lean Meats
Select meats that have minimum marbling. Trim the excess fat. Grill or broil to allow any excess fat to drip off. A portion size would generally be around the size of a deck of cards.

Avoid fatty meats like mutton, ham, bacon, corned beef, luncheon meat, hot dogs, sausages, spare ribs and sandwich spreads.
Poultry
Remove the skin from chicken and turkey.
Poultry To Avoid
Avoid self basted poultry, chicken frankfurters and processed poultry products.
Seafood
As fish oils are excellent for the heart, choose fish that are highest in fish oil, such as mackerel, tuna, salmon, pollack, blue fish, swordfish and walleye. Given the huge benefits to be gained, fish should be eaten a minimum of three times a week. If you are averse to fish, then please seriously consider adding a fish oil supplement to your diet.

Avoid any seafood that is deep fried or sauteed.
Vegetables
Choose from fresh, frozen or low sodium canned vegetables.

Avoid creamed, breaded or deep-fat fried vegetables as well as vegetables in sauces.

Choose from homemade baked goods, made with unsaturated oils or spreads, angel food cakes, fruit whips, ginger snaps, low-fat frozen desserts, custards and fruit ice.

Avoid desserts made with whole milk, cream, chocolate, egg yolk and butter. Plus commercially prepared cakes, pastries, ice-cream, cookies and chocolate desserts.
Cheese
Choose from low-fat cheeses like mozzarella, ricotta, Swiss and cottage cheese.
Cheeses To Avoid
The majority of cheeses are high in saturated fat, so avoid processed cheese, cream cheese and cheese spreads.
Crackers & Snacks
Choose unsalted crackers and pretzels.
Crackers And Snacks To Avoid
Avoid taking salted crackers or snacks, any snack and crackers containing saturated fats, fried snack food, cheese crackers, corn chips, tortilla chips, and potato chips.
Beverages
Choose mineral or sparkling water, club soda, tea or coffee.
Beverages to Avoid
Avoid taking tonic, instant cocoa mixes and commercially or home softened water.
Avoid being swayed by advertisements because they promote non-therapeutic ways of lowering cholesterol for patients who have high blood pressure. They even tell you how simple it is to lower cholesterol and improve your overall health. As a result, patients rely on the advertisement's prescription medications and drugs. People should realize that there are pro-active methods on dealing with these problems.
Instead of relying on drugs, it is a good thing that we deal with this problem in a safer and natural approach. There are alternatives that we can do to control cholesterol that would require us not to sacrifice that much. A change in diet is one thing. There are foods out there that can lower cholesterol levels in the body. Foods rich in vitamins and nutrients are helpful because they lower the bad cholesterol also known as LDL (low-density lipoprotein) and they increase the good cholesterol or HDL (high-density lipoprotein) in our body. Drugs are always considered the final option for doctors, as much as possible, it is best to stay or choose the natural way.

Sometimes a cook is just too tired to cook a full meal.  There is nothing wrong with serving sandwiches sometimes, especially these sandwiches.  Hero Ham Sandwiches take only about 15 minutes and you are serving your family warm sandwiches of meat, cheese, vegetables, and of course, bread.  Serve with fruit and you have a complete meal.  The Quick and Easy Meatball Heroes are ready in minutes.  In this sandwich you have meat, soup, cheese, and lettuce.  Again, serve with baby carrots or a bowl of fruit for a complete meal.

HERO HAM SANDWICHES
1 tbsp olive oil
1 onion, sliced
1 red bell pepper, sliced into rings
1 green bell pepper, sliced into rings
1 lb Honey Baked ham slices
1 cup grated mozzarella cheese
2 French baguette loaves, cut into thirds
6 tsp Dijon mustard
Heat a skillet over medium heat and add the olive oil. Add the onions and bell peppers; saute, stirring until vegetables are tender. This will take about 5 minutes. Cool slightly. Preheat the broiler.
Lay the baguette sections on a cutting board and slice each horizontally. Spread each bottom part with the Dijon mustard. Layer the ham slices and the onion mixture over the bottom baguette slice and sprinkle a generous tablespoon of cheese over the top. Place the open-face baguette slices on a baking sheet and broil for 3 to 4 minutes until cheese is melted. Replace the top slices and serve warm.
Serves 6.

QUICK AND EASY MEATBALL HEROES
1 pkg precooked frozen meatballs, slightly thawed
1 can tomato soup
1 soup can of water
1/2 tsp garlic powder
1/4 tsp dried basil
1/4 tsp dried oregano
1/4 tsp black pepper
1 cup shredded mozzarella cheese
Hero sandwich rolls
Shredded lettuce, if desired
In a medium saucepan, put the soup, water, garlic powder, basil, oregano, and pepper. Mix well and heat to almost boiling. Add the meatballs to the soup mixture and cook until heated through. Place meatballs in sandwich rolls, spoon some sauce over meatballs, and sprinkle the shredded cheese over the meatballs. Top with shredded lettuce, if desired.

I used half a 14 oz loaf twice the food section of my supermarket) 1 tablespoon butter, softened 2 slices Swiss cheese (deli-style) 1 roma tomato, thinly sliced ham 1 / 2 pound of honey, shaving (I bought my food in the supermarket.) 2tablespoons oil and vinegar with 2 slices of provolone sub spices, extra virgin olive oil if necessary to cook on the stove a slice 7 oz loaf of French bread horizontally into two equal parts. Then cut into two equal parts by two individuals to serve sandwiches sandwiches. Spread the cut sides of bread with softened butter, and brown in a skillet on the stove. For the bread of others spread 2 tablespoons of dressing on the side of the cut underwater. Now start to assemble the twosandwiches. The sandwiches that golden era, place 1 slice of Swiss cheese on a cut, half browned. Place 3 slices of tomato on top of cheese. Now, instead lbs 1 / 4 shaved honey ham on top of tomatoes. Put more than three slices of tomato on top of the ham, and place 1 slice of Swiss cheese over top of tomatoes. Complete sandwiches, keeping the other half used, browned and limit storage is filling sandwiches. Set aside while preparing a second type of ham and cheese...

How to Make Two Bean Soup and Split Pea and Turkey Ham Soup (Both are additionally absolute for Diabetics)

Soups are easy to make, they are inexpensive, and they are very nourishing.  Here are a couple of recipes that are great soups and they are also perfect for diabetics.  Two Bean Soup uses baby Lima beans and  great northern beans together for a tasty combination.  The Split-Pea and Turkey Ham Soup is a convenient slow-cooker recipe.
TWO-BEAN SOUP
1/2 lb dried baby Lima beans
1/2 lb dried great northern beans
1 (49 1/2 oz) can reduced-sodium chicken broth
1 1/2 cups cubed cooked lean ham
1 medium onion, chopped
2 celery ribs with leaves, chopped
2 medium carrots, sliced
3 garlic cloves, minced
1/8 tsp ground ginger
2 green onions, sliced, optional
Wash beans and remove any bad ones.  Place in a large pot or dutch oven and add enough water to cover by 2-inches.  Bring to a boil and boil for two minutes.  Remove from the heat; cover and let stand one hour.
Drain beans and rinse.  Return beans to pot.  Add broth and ham; bring to a boil.  Reduce heat; cover and simmer for one hour.  Add the onion, celery, carrots, garlic, ginger and return to a boil.  Reduce heat and cover pot.  Simmer at least one-half hour or until beans and vegetables are tender.  Place in serving bowls and top with green onions for garnish if desired.
Serves 7  Per serving:  215 calories, 31 g carbs, 10 g fiber, 19 g protein
Note:  Beans are an excellent food choice for diabetics.
SPLIT PEA AND TURKEY HAM SOUP
6-oz turkey ham, cut into small cubes
1 cup raw green split peas
1 small yellow onion, diced
1 large carrot, peeled and diced
2 stalks celery, trimmed and diced
2 bay leaves
1 large garlic clove, minced
1/4 tsp crushed dried thyme
1/8 tsp black pepper
4 cups no-salt-added chicken broth
In a 5-quart slow cooker, combine all the above ingredients.  Cover and cook on low for 6 hours.
4 servings of 1 1/2 cups each = 282 calories, 39 g carbs, 26 g protein

Betty's Trip to Hall's Restaurant with Rick--NO RECIPE--

In this video, Betty and her husband, Rick, have a late lunch at Hall's on the River in Boonesborough, Kentucky. Boonesborough is about 20 miles from our home. We stopped by Boonesborough State Park on the way to the restaurant to point out the original location of Fort Boonesborough (named after Daniel Boone). At the restaurant, we chose Deep-Fried Banana Peppers, Snappy Beer Cheese, Fried Catfish, Coleslaw, Garlic Cheese Grits, along with a cold soda and a tall glass of iced tea. I also ordered an authentic piece of Derby Pie (made by Kern's Kitchens) to take home. We have already made deep-fried banana peppers, garlic cheese grits, catfish, and derby pie in bettyskitchen, so we visited the restaurant mainly to check out the beer cheese. I will be making and uploading beer cheese soon! We had a wonderful time (although it did begin to rain), and we are honored to have you come along! --Betty :)

Hate broccoli? Broccoli recipes that will change your mind!

There are probably more people who dislike broccoli than there are enthusiastic fans of this much maligned vegetable. This may be due, in part, to the way you prepare this nutrient rich veggie. It must be noted that broccoli is one of the healthiest choices you can make when trying to get those 5-9 servings of produce each day. In fact, many holistic health practitioners often recommend broccoli as a daily dish for patients recuperating from serious illnesses.
Many of us remember that section of our dinner plate covered with an overly large portion of limp broccoli stalks that even the dog disdained as an under-the-table 'treat'. The trick to delicious broccoli recipes that curry favor with your family is all in the preparation and seasonings. Here we have some generic broccoli recipes that may well become family favorites!
As mentioned, broccoli loses all of its potential appeal, as well as much of its nutritional value, when overcooked. Naturally, raw broccoli retains almost all of its nutritional benefits, so we've included a raw salad broccoli recipe you'll want to try.
Most cooks have trouble using seasonings that marry well with broccoli. This veggie does have a distinctive and somewhat strong taste, making it a seemingly difficult match. This means it's usually served with a little salt and pepper and maybe a dab of butter, resulting in a less than interesting combination. Next time you serve broccoli, try one of the following seasonings to add some zip to your broccoli recipes.
One delightful combination is as easy as it is simple, but oh so tasty: steam your broccoli, just until cooked. It should still have a bit of crunch. Just before serving, sprinkle with a teaspoon or two to taste and splash with a little lemon juice.
Another combination of veggies that makes a tasty broccoli side dish: along with your broccoli, steam some julienne-cut carrots. Lightly saute several mushrooms in  one or two teaspoons of olive oil. Finely dice a red onion and toss all the ingredients together. Serve and enjoy.
If you're watching your food budget (who isn't?), here's a cheap broccoli recipe that serves as a complete meal. Cook up a batch of rice and steam your broccoli. Dice a red bell pepper and lightly saute with one clove of finely minced garlic. Cut a ½ inch slice of ham into cubes. Mix the broccoli, pepper, garlic and ham in a medium bowl. Serve over a bed of rice. This dish can also be enhanced with some grated Parmesan or smoked sharp cheddar.
To make this broccoli recipe even more filling, try adding one of the following: a can of cream of mushroom or cream of chicken soup, or a cream sauce spiked with a pinch of cayenne pepper or garnished with paprika.
Other seasonings that complement broccoli include lemon pepper, celery salt, basil and oregano. Use these seasonings one at a time!
Another simple broccoli dish that makes a hearty side dish: add either a can of cheddar cheese soup or make a batch of packaged Hollandaise sauce.
Add broccoli and bacon bits to a cheese souffle for a one dish meal.
Here's a combination you may not believe: broccoli and French dressing is terrific as a cold summertime salad. Cut broccoli florets in thin slices and add some diced red onions. Let each diner add their French dressing to suit their taste.

Soup, Soup, Glorious Soup

It isn't many foods that have poems written about them. And remember the story of Esau who, coming in tired and hungry, was willing to give up his birthright for a bowl of pottage - lentil soup. I t must have been good soup! From the time man discovered that he could bake clay hard in the fire he began to make clay pots - and what do you cook in such a pot? - Soup of course.

The earliest pots have the markings of woven sticks on the outside so presumably they first of all lined baskets with clay - but somehow soup in a basket never took off.

Every generation and every people group have some form of soup or stew - it is served hot, cold, thick, thin, creamy, clear, vegetarian, meaty, spicy - something for everyone. It isn't as fashionable at dinner parties these days - starters tend to be more complicated and dinner parties an excuse to show off. But soup will go on as long as people come home hungry and it is time for a revival

Sweet and Creamy
For 4 you will need

25 grams ( 1 oz)
I clove of garlic, crushed
225 grams sweet potato
1 largish parsnip
1 level teaspoon of paprika
1 level teaspoon of chilli flakes or ½ deseeded chilli, finely sliced
750 mls ( 26 fl oz) vegetable stock
2 teaspoons of mustard of your choice - mine would be honey mustard
1 tablespoon of grated strong cheese - Parmesan, Cheddar, Stilton
125 ml ( ¼ pint ) double cream or low fat yoghurt
Salt and pepper

Dice the sweet potato and the parsnip. Melt the butter and fry the garlic, parsnip and sweet potato. Add the spices, chilli and stock. Bring to the boil and simmer for about 20 minutes. Stir in the mustard and cheese. Blend in food processor. Reheat in pan, but do not boil. Season to taste. When serving add a spoon of cream or yoghurt.

Variation - you could replace the parsnip with carrots or squash.

Chicken Soup - one version is known as New York Penicillin so good is the effect of eating soups like this.
For 4 you need

75 grams ( 3 oz) of pearl barley or red lentils
4 medium potatoes, cooked for 10 minutes and diced
2 carrots, diced
1 onion, diced
2 chicken breasts - I prefer to leave them in quite big chunks, but you may prefer to cut them into smaller pieces.
845 mls (1 1/1 pints ) chicken stock

If you are using lentils boil them up in clean water first and then rinse and drain. This makes them less gassy. In a large pan cook the carrots, onion, stock, and pearl barley or lentils. Simmer at least 20 minutes. Add the potatoes and heat through. Whether or not you need to add more seasoning depends upon the stock used. Add the potatoes and cook for a further 20 minutes until the barley is cooked through.

Variations

Replace the onion with a finely sliced leek. If you drain off some of the stock you can add some diced ham and a pastry lid and you have a delicious chicken and ham pie.

Salad Soup

Yes I know it sounds weird, but it tastes good. The use of lettuce in soup goes back all the way to ancient Rome.
For 4 you will need

25 g ( 1 oz) butter
I medium potato, diced
I onion, diced
520 mls ( 18fl oz) vegetable stock
75 grams (3 oz) peas - frozen are fine
2 handfuls of lettuce leaves
3 green onions ( scallions) sliced finely
4 radishes cut up small or sliced very finely
Salt and pepper
3 tablespoons of double cream ( or you could save the top of the milk for a day or two.)
1 teaspoon of chopped herbs - parsley, mixed herbs, oregano, chervil as you like

Cook the potato and onion in melted butter. Add the stock and peas. Boil and then simmer for about 25 minutes. Shred lettuce finely and add. Cook for 5 minutes and then blend. Add the chopped green onions and radishes. Season as needed. Add the herbs. When serving add a spoonful of cream to top each bowl.

Southern Living Betty White bean soup recipe

In this video, Betty shows you how to make your white bean soup, a recipe submitted to Southern Living magazine in 1990 and published. This is a soup bean filling, but fast and easy! Ingredients: (. Approximately 16 ounces) 1 can white beans 1 can northern white beans (. Approximately 16 ounces) 1 cup water 1 / 2 stick butter or margarine 1 / 4 cup onion, chopped 1 carrot, chopped 1 5 oz can slice of salted pork, flaked with a fork (I used Hormel.) Place the box of white beansthe degree of great northern beans in a large pot over medium heat. Add 1 cup water and mix well. Now, take a potato masher (or fork or spoon) and mash bean mixture and water until soft. Place over low heat on the stove. Next dissolve 1 / 2 stick of butter in a medium-small skillet. Add the onion 1 / 4 cup chopped 1 carrot, chopped with melted margarine. Place the pan on the stove and fry until the onion is transparent. Combine the sautéed onions and carrots to the mixture of beans.Add a 5 oz can tender chunk ham. Simmer for 10 minutes. Serve with cornbread Betty Great Southern corn bread or sticks. This is very good on a cold day - and hot-fill!

Hearty Potato Soup for Paula Deen Sweepstakes

3lbs Red Potatoes, cut 1" chunks, cook in salted water until almost completely cooked (use 8 quart sauce pan) While potatoes are cooking finish the remaining ingredients. In a skillet set at medium temp: Cook 1/3 pkg of smoked bacon cut up in bite size pieces add 1 med onion, cut into small pieces (size of large pea) to the bacon and bacon grease 3 cloves garlic minced, add to onion and cook for additional 1-2 minutes (when cooked set to the side) Check potatoes and if they are almost completely cooked, drain about half the water. (remaining keep with the potatoes) Add to the potatoes: 3 stalks celery, cut into small pieces 1 large carrot cut up into small pieces 1/4 cup red pepper, chopped small pieces 2 cups ham cut into small bite size pieces Stir and keep on med to low heat. For the creamy sauce: In a 1 1/2 quart sauce pan on med heat, add 4 T butter (melt in sauce but be sure not to burn butter) 3 T flour, whisk this in the hot butter until creamy and thick (about 2 minutes), add 4oz of cream cheese and continue whisking until completely blended. 32 oz of chicken stock, slowly whisk this in with butter/flour mixture and cream cheese mixture but only a little at a time until you have added all of it. 1/2 quart of cream, whisk this in after adding chicken stock. Add remaining ingreds to this mixture and continue to cook for an additional 10-15 minutes on low to med heat but be sure to continue stir/whisk. Add half of the cooked bacon, onion and garlic 2 cups shredded ...

Are you Insulin Resistant?

Do you feel tired and sluggish all the time? When you try to lose weight, do you get so hungry that your hunger defeats all your efforts to stay on a diet? Have you been gaining weight and can't seem to get it off? If you answered "yes" to these questions, you could be Insulin Resistant. And if you are insulin resistant, you are at risk for both morbid obesity--that's weight gain so extreme that it threatens your life--and developing Type 2 Diabetes.





What is “insulin resistance?”


Insulin is the hormone "key" that unlocks your body's tissues, enabling them to utilize as fuel the glucose or sugar that is in your blood from digestion of the foods you eat. This ability to remove sugar from the blood and convert it to fuel is vital to a healthy body. Your muscles need sugar to function, and so does your brain. When you are insulin resistant, your body's tissues "resist" the insulin's attempt to metabolize the sugar into a usable fuel. Even though your body is starved for the sugar it needs for fuel, it is unable to use the available sugar in your blood. So instead of being used as fuel, the sugar builds up in your blood, which causes many serious health problems.





What causes insulin resistance?


Insulin resistance develops over time from an unhealthy lifestyle and bad eating habits. Too much fast food and chemical-laden processed food, combined with stress, insufficient sleep and a lack of exercise, starts to take its toll. A diet lacking in fiber, complex carbohydrates, fresh fruits and vegetables further deprives your body of the resources it needs to recover from the poor diet and unhealthy habits.





Why is insulin resistance a problem?


If your body is unable to get rid of the sugar in your blood by burning it as fuel, blood sugar can rise to dangerously high levels. Prolonged levels of elevated blood sugar cause “bad” cholesterol to soar and your blood pressure to shoot up. Left uncorrected, your body’s inability to use insulin can bring on the onset of diabetes.





When your body tissues become resistant to insulin and blood sugar levels begin to rise, your pancreas responds--as it is programmed to do--by producing and releasing still more insulin. Too much insulin in your blood has two very undesirable side effects: it makes you feel hungry (because your body is literally starving for fuel), and attempts to neutralize the excess sugar by causing your body to store it as fat! No wonder your every attempt to lose weight ends in failure!





Worst of all, if this "insulin resistant" condition continues for too long, your pancreas can simply become exhausted from producing all that insulin and greatly reduce its output, or stop altogether. When that happens, it causes the condition known as diabetes. Diabetes simply means your body does not produce enough insulin or is not able to use the insulin it produces. Without insulin or medication to activate the processing of sugar in your body's tissues, the sugar simply builds up in your blood--causing nerve and circulatory damage that may lead to heart attacks, strokes, kidney failure and blindness.





What can I do to reverse insulin resistance and prevent diabetes?


The good new is that just because you are insulin resistant doesn't mean you are doomed to become a diabetic. If you make changes to your diet and lifestyle now, you can reverse the process and your body will again accept and utilize insulin the way it should to keep your blood sugar levels within safe, normal range.





Diet and exercise are the key to making this happen! (You knew I was going say that, didn't you?) Exercise is the number one, best way to increase your body's sensitivity to insulin! Your muscles are fueled by sugar. When you exercise, your muscles are less resistant to the action of insulin and allow the sugar to be utilized as the fuel they need to meet the demands placed upon them by the exercise. A combination of aerobic exercise--such as walking--and strength training--working with small weights to increase muscle mass--has proven to be the most effective combination to combat insulin resistance or lower your blood sugar levels, if you are already diabetic.





And yes, diet is important, but how you diet is even more important! Simply cutting calories or eating less just doesn't work, if you are insulin resistant, because that does nothing to correct the over-supply of insulin. What DOES work is paying attention to the "glycemic index" of the foods you eat, to avoid dumping a large amount of sugar into your blood all at once. Since the presence of too much sugar in your blood is what triggers the excess insulin --starting the hunger/fat storing cycle all over again—the key is choosing foods that digest more slowly and release sugar more gradually.





What is the “Glycemic Index"?


Put simply, the "glycemic index" of a given food is a number assigned to that food, based upon how fast it turns to sugar in your blood when it's digested. Most foods, when digested, are broken down to sugar, since that is your body's primary fuel. But the conversion to sugar happens much faster with some foods, than with others. In general, "white" foods have a high glycemic index--meaning they will very quickly turn to sugar in your blood--triggering the undesirable flood of insulin. These white foods include white bread, potatoes, white rice and (go figure!) white sugar. All of these are “simple” carbohydrates—meaning they are easily and quickly digested.





The “glycemic index” is an excellent tool for learning what foods will help you avoid the excess insulin that sabotages your efforts to lose weight. Once you get the hang of it, though, you won’t need to count "glycemic points" for the rest of your life to make this work. Just remember that instead of simple carbohydrates that will quickly turn to sugar in your blood, you need to eat complex carbohydrates that digest more slowly, thus slowing the accumulation of blood sugar and avoiding the excess insulin trap.





Instead of white pasta, eat whole wheat pasta. (It looks "brown" before it's cooked, but once it's cooked and paired with sauce, it's hard to tell the difference!) Instead of white bread, find a good, whole-grain bread you like, and eat that, instead. Instead of orange juice--which is high in sugar and is transformed almost instantly into sugar in your blood--eat the whole orange. The fiber in the orange will slow the arrival of the sugar in your blood. So: eat complex carbohydrates like whole-grain pasta, whole-grain breads, beans and lentils. (Like split pea soup with a little ham for seasoning? That's an excellent choice of a lower glycemic index food! Fresh fruits and veggies are good, too.) Mixing these more complex foods with protein slows the breakdown into sugar even more.





And here's the best part: If you follow this method of eating, you'll find those hunger pangs will soon fade and disappear. You'll stop storing fat and start losing weight, and you'll feel great! If you simply must have one of those "bad" high glycemic index foods, combine it with one of the complex foods described above. This will help to slow down how quickly the sugar from that "bad" food will hit your blood, thus avoiding the unwanted "insulin spike".





Moreover, this is a very healthy diet--one that's safe to use indefinitely--and one that's so easy to live with you can stick with it! You need not starve yourself or live on lettuce leaves and celery. You’ll find that you can eat real food in reasonable quantities and still lose weight! A couple of cautions, though: One thing you will want to count is how many grams of fat you’re consuming. To lose the fat you’ve accumulated over time, you need to eat less fat than your body needs, so it will be forced to start burning up the fat you’ve stored. Portion size is important, too. Regardless of what the ads for some “diet aids” tell you, you can’t eat unlimited amounts and expect to lose weight. But if you stay on this diet for a week or two, you’ll find that you can eat smaller portions and still feel satisfied. Add exercise to your diet plan to lose weight even faster, and further reduce the "insulin spikes" that sabotage your efforts.

3 Hot Lunchtime Sandwich Recipes For Busy Moms

When it comes to feeding my family their lunches, I like to alternate between hot and cold sandwiches. During the hot summertime months, I like to use my toaster oven to make the recipes, but you could certainly use a conventional oven too.
You could serve a simple side salad, some fresh veggies, a hot soup or a few fresh fruits.
Tuna Burgers
1 can tuna, drained
1/3 cup reduced-fat mayonnaise
1/8 cup onion, finely chopped
2 hard boiled eggs, chopped
1/2 cup sour cream
Cheddar Cheese, shredded
2 hamburger buns
In a medium sized bowl, combine all of the above ingredients together, except for the cheddar cheese until well blended. Split the 2 hamburger buns so that you have 4 halves. Spread the tuna mixture evenly on the bun halves and sprinkle the cheddar cheese on top. Place them on a baking sheet and bake in a 350 degree oven or toaster oven until they are bubbly and hot, approximately 8-10 minutes.
Spam Sandwiches
1 can of Spam, chopped into pieces
1/2 lb. American Cheese
1 small onion, finely chopped
1/4 cup green olives
1 small can tomato paste
4 hot dog rolls
Place cheese, Spam meat, onions and olives in a blender and blend until ingredients are chopped up and well blended together. Pour in the tomato paste and blend for 30 additional seconds. Spoon mixture into the hot dog rolls and then wrap each roll in aluminum foil. Place foil packs on a baking sheet and bake in a 350 degree oven for 25 minutes, let cool slightly and then serve warm.
Devil Ham Sandwiches
1 green pepper, finely chopped
1 small onion, finely chopped
1 lb. sharp cheddar cheese, shredded
1/4 cup catsup
4 tablespoons sweet pickle relish
5 ounce can deviled ham
1/2 cup sour cream
1/4 cup melted butter
4 hamburger rolls
In a medium sized bowl, combine all of the above ingredients together except for the rolls. Place the filling equally into the 4 hamburger rolls and then wrap the rolls in aluminum foil and place on a baking sheet. Bake the foil packs in a preheated 350 degree oven for 12 minutes.

Betty's Baked Chicken Breasts with Sour Cream Gravy Recipe

In this video, Betty demonstrates how to make her impressive Baked Chicken breasts with Sour Cream Gravy recipe. This chicken is slow-baked in the oven and is lusciously tender with a mushroom-sour cream gravy that is tangy and as smooth as silk! Ingredients: 2.5 pounds chicken breasts (I came out with 10 fairly evenly-sized serving pieces.) 2.25 oz. jar of dried beef or sliced deli ham (I used the dried beef, but only 10 half circles of it.) 1 pint (16 oz.) sour cream 10 3/4 oz.can condensed cream of mushroom soup 5 or 6 slices of bacon, mostly cooked oil spray for baking dish Trim all excess fat and gristle from the chicken breasts, and then cut them into pieces that can be rolled up. If your pieces are thick and hard to roll, try pounding them flat with a mallet or hammer covered with aluminum foil. Place 1 or 2 half rounds of dried beef, or an appropriate amount of sliced ham on top of an uncooked chicken breast. Roll the chicken breast, until it encompasses the filling. Close with a toothpick, and place in an 8-inch by 10-inch baking dish that has been sprayed with cooking spray. Continue until you have used up all your chicken breasts and filling. now, make your gravy. Combine 1 pint of sour cream and a 10 3/4 oz. can condensed cream of mushroom soup. Stir until the two ingredients are completely blended. Pour the mushroom-sour cream gravy over the top of the individual chicken rolls that are in your baking dish. Spread the gravy as evenly as you can on top, and let ...

Betty's Ham Salad & Ham Salad Sandwich Recipe

In this video, Betty demonstrates how to make ham salad and serve it as a sandwich, as well as a salad. Either way, it makes a light, but filling, tasty lunch! Ingredients: 5 oz. chunk ham (I used Hormel smoked ham, but you can use leftover ham that is cut in small pieces.) 1 hard-boiled egg, finely chopped 1/4 cup sweet pickle relish 1/4 cup mayonnaise 4 or 5 lettuce leaves, washed and dried with a paper towel about 2 thin slices tomato 2 slices 100% whole wheat bread, frozen In a small to medium-sized bowl, combine 5 oz. chunked ham, 1 chopped hard-boiled egg, 1/4 cup sweet pickle relish, and 1/4 cup mayonnaise. Mix well. If you like your ham salad very smooth, then blend it with a mixer at this point. To serve as a salad, place a generous mound of the mixture on a couple of lettuce leaves. Arrange some slices of apple on each side, and place some banana slices in an attractive way--a very healthy light lunch! To make your ham salad into a sandwich, spread your ham mixture onto one slice of frozen whole wheat bread. (Using frozen bread allows you to spread fillings easily, and it thaws very quickly for eating, when at room temperature.) Dress your sandwich by adding a couple of leaves of lettuce and a couple of slices of fresh tomato. Cap your sandwich off with the other slice of whole wheat bread. Cut the sandwich into two halves, cutting diagonally. Place your sandwich on a plate, with a few sweet midget pickles and some vegetable chips. Another light and healthy lunch!
